summer has arrived and i’m craving light, flavorful meals on the grill. i invited my sister over for dinner and a little bachelorette viewing to spice up our monday night. while browsing through some recipe books, i discovered this sliced lemon technique for grilling flaky fish. it worked like a charm!
grilled tilapia + summer veggies
cut up all the veggies, drizzle them with olive oil and sprinkle with s + p. also oil, salt + pepper the fish.
rub the grill with olive oil (or spray with grill pam) and line the lemons evenly on the grill. place all the veggies cut side down, and create a little foil packet for the tomatoes.
before putting the fish on the lemons, sprinkle the herbs over the lemons. then place the fish, add the herbs on top.
in about 7 minutes - this feast will be yours! you do not need to flip the fish, they will cook evenly this way and the lemons surprisingly add a lot of flavor. once the fish flakes with a fork, it’s done. carefully remove from the grill, cover with foil until ready to eat.
not pictured: i mixed some garlic-dill seasoning into nonfat greek yogurt, added some lemon juice, and served that alongside the fish.
